Most supermarket honey is blended from multiple countries, gently heated and filtered until there is little of the original hive left in the jar. A 2023 EU investigation found the majority of UK-sold honey to be adulterated. Raw local honey is the opposite: taken straight from a nearby hive, unheated and unmessed with, so the pollen, enzymes and flavour of your own area stay intact.
